Recipe for Chicken Salad by Julie Tashkin, author of The Food Blogger’s Food Bible: Chicken Salad recipe 1 cup shredded chicken 1 cup tomato sauce 1/2 cup olive oil 2 tablespoons lemon juice 1/4 teaspoon dried oregano 1/8 teaspoon salt 1 cup chopped cilantro leaves 1/3 cup chopped parsley Toppings: 1 tablespoon lime juice, optional Instructions: Preheat oven to 400 degrees F. Place chicken in a large bowl and add the tomato sauce, olive oil, lemon juice, oreganol, salt, and parsley.
Add the cilantro and chopped parsleys to the bowl.
Mix well to combine.
Boil chicken and add more tomato sauce.
Toss chicken in the mixture.
Cover and bake for 30-35 minutes.
To serve: Top with chicken, salad and a sprinkle of lime juice.
