This vegan Christmas cookie recipe was adapted from a recipe by author Leah Stroud and is vegan and gluten free.

1 cup walnuts 1 cup flaxseeds, chopped 1 cup nutritional yeast 1 tsp sea salt 1 cup powdered sugar 1/4 cup coconut oil 1/2 cup walnut flour 1 tsp baking soda 1 cup vegan vanilla bean gelatins 1 tsp cinnamon pinch of cloves 3 tbsp vegan chocolate chips 3 tbsp unsweetened cocoa powder 2 tbsp coconut oil (optional) Instructions Preheat oven to 375 degrees F. Line a cookie sheet with parchment paper and grease with nonstick cooking spray.
In a large bowl, whisk together the flaxseed, nutritional yeast, sea salt, and powdered sugar.
Whisk until blended.
In another bowl, mix together the almond flour, coconut oil, vegan vanilla beans, walnuts, flax seeds, nutritional yeast, and cinnamon.
Stir until well combined.
Pour batter into prepared cookie sheet and bake for 10-12 minutes or until a toothpick inserted into the center comes out clean.
Cool completely on the cookie sheet.
Allow to cool completely before frosting.
Notes *This recipe makes about 2 cups of cookies.
