This is Carne asado, an asada-style taco salad made with cauliflower.
The basic ingredients are chicken, avocado, red onion, cilantro, and a splash of lime juice.
The avocado is a great source of vitamins and minerals, as well as vitamin E and vitamin B12.
I like to add a little extra lime juice to the salad to make it a little richer.
This salad is a perfect appetizer for any date night, and it’s great to serve with rice, quinoa, and avocado.
This simple, easy-to-prepare salad is super easy to make, and can easily be made in less than 30 minutes.
You’ll need:1/4 cup olive oil2 cups cilantro leaves, stems removed (or 1/4 teaspoon chopped)1/2 red onion1/3 cup avocado, sliced1 tablespoon lime juice1 teaspoon chili powder1 teaspoon cumin1 teaspoon salt1 cup of diced carrots2 cups of rice, rinsed and drained (or 2 cups cooked, riced, or cubed)1 avocado, peeled and diced1 small red onion2 cups cooked chicken, chopped1/8 teaspoon salt, or to taste1 tablespoon chili powder2 tablespoons lime juice3 tablespoons extra virgin olive oil3/4 of a can of diced tomatoes, drained and rinses off1 avocado and 1 small red or green pepper, peeled1 teaspoon ground cumin and 1 teaspoon saltSalt and pepper to taste, to tasteDirections:1.
Heat oil in a large skillet over medium heat.
Add onion and sauté until softened, about 5 minutes.
Add chicken and stir to coat with oil.
Cook until browned on all sides, about 2 minutes more.
Add cilantro and saute for another 2 minutes.
Stir in avocado, lime juice, chili powder, and cumin.
Season with salt and pepper.2.
Add the remaining ingredients to a blender and blend until smooth.
Add extra virgin oil and blend to blend, scraping down the sides and sides of the bowl with a spatula.3.
Serve immediately with rice and quinoa for a full meal.
