A carrot cake is a delicious treat for all seasons.
It’s filled with sweet caramel sauce, butternut squash, caramel, walnuts and a crunchy pastry crust.
It is an excellent addition to many a dessert and can be eaten with butter or cream.
Here are the basic ingredients to make a delicious carrot cake: 1.5kg acorn stalks (the big ones are ok) 1kg acorns (the small ones are okay) 1/4 cup butter 1 egg 1/2 tsp baking powder 1/8 tsp salt 1/3 cup sugar 1/16 tsp cinnamon 1 tsp vanilla extract 2 eggs, beaten 1 cup sugar and 2 tsp vanilla 1/12 cup buttercream and flour for the top of the cake 1/6 cup chopped walnuts (or any other nut) 1 tbsp maple syrup 1/5 cup almond milk for sprinkling 1 tbsp water for sprinkles 2 cups icing sugar 1 cup heavy cream 1 cup icing sugar (for sprinkling) 1 tsp lemon juice (optional) Directions: In a large bowl, whisk together the eggs, sugar, baking powder, salt, cinnamon and vanilla extract.
In a separate bowl, mix the acorn and walnut halves together until they are well combined.
In another bowl, stir in the almond milk, heavy cream and icing sugar.
Add the remaining ingredients and stir well until smooth.
Gently fold in the flour until well combined and smooth.
Place in a greased muffin tin and bake for 20-25 minutes, or until a skewer inserted into the center comes out clean.
To assemble, put the acorns in the centre of the baking tin and the walnuts in the edges.
Top with icing sugar and serve.
Recipe Notes You can make this recipe with other nuts, such as walnuts, almonds or pecans.
To make the recipe with almonds, add a teaspoon of almonds to the flour mixture.
To be sure, try not to over-mix the batter.
This is a gluten-free recipe and it can be made without a wheat-free flour.
