Add the onion and sauté until golden, about 3 minutes.
Add in the bacon and cook until browned, about 2 minutes.
Add the chicken broth and garlic powder, salt, and cumin.
Cook for about 3-4 minutes, until the mixture starts to thicken.
Add minced herbs and oreganos.
Bring to a boil and then reduce heat to low and simmer until the pork is tender, about 5-6 minutes.
Drain and set aside.
Cut up the pork belly into 1-inch cubes.
Add it to the pot with the cooked chicken broth.
Bring the mixture to a rolling boil, cover and reduce heat for about 10 minutes, stirring occasionally.
Drain and set the mixture aside.
Add half the pork into the pot and then add the rest of the pork.
Cook until the meat is cooked through, about 1 minute.
Remove the pork from the pot.
Slice the pork, and then place it in a serving bowl and top with the remaining bacon and pork.
Serve with rice and beans.
