Here’s how to make it: 1) Preheat the oven to 180C/Gas Mark 5.

Line two baking trays with parchment paper or foil.

2) Cut up the carrot, onion, celery and carrot seeds into 1cm slices.

3) Place them on a baking tray and cook until soft and cooked through, about 15 minutes.

4) Meanwhile, chop up the tomatoes and the basil.

5) Place the diced carrot, onions and celery into a food processor and pulse until finely chopped.

6) Add the garlic, salt, pepper and a little water, and pulse for a minute or two.

7) Season with salt and pepper.

8) Heat a pan over a medium heat and add the tomato puree and tomato paste.

Stir constantly, and when it starts to boil, turn the heat down to medium low and let it cook for about 30 seconds.

Add the cooked onions and cook for another minute or so. 9) Once the onions have cooked through and the mixture is slightly bubbly, add the chicken and cook, stirring, for about 10 seconds.

Then add the lemon juice and cook a few more minutes until the chicken is cooked through.

10) Add some freshly ground black pepper and cook another minute.

11) Add in the egg, the tomato paste, the cayenne pepper and the grated cheese.

12) Mix it all up well.

It will be a bit sticky, so be careful.

13) Spread the mixture on a plate and top with some of the goat cheese, a bit of lemon zest and some pesto if you’d like.

Bake for about 45 minutes, or until the cheese is melted and the top is golden brown.
